[GF&SF&Keto] Easy Almond Bread





Yes! I finally have succeeded in baking the best Keto friendly, gluten free, sugar&fructose free bread!

I'm so excited for myself.


I've been searching everywhere, EVERYWHERE for bread recipe
that suits any of my heath conditions.

However, in pinterest and other recipe websites
I could only find the ones that suit for one symptom.

For example, if the recipe is gluten free it's not sugar free, 
and if it is gluten and sugar free it still needs fructose like honey or fruits.
Furthermore, if it is gluten, sugar and fructose free 
it was just too darn hard to make it because
they ask for all these ingredients I don't have or know!!


I just could not stand it anymore so
I tried baking it on my own!


It was my first time creating a recipe from a scratch!

Seriously! I usually get some hints and tips from others
but this time, I just went for it!




I was iffy about it at first,
but when I tasted the end result, I was amazed.




First, texture! It is rough like a grainy bread (whole grain sandwich bread)
but moist like a pound cake but not buttery and soft.
It holds well so it can be used for sandwich (hallelujah!)
and can be eaten with just butter and jam like a scone!

If you are looking for almond cake (fluffier and sweeter!)






The bread is comparable with rye bread for it's moist but firm texture
but it is not tangy at all!
I really hope you guys can try this and tell me how you like it!

p.s you can easily ground almonds for almond meal(flour), 
it doesn't have to be blanched almond flour!

Ingredients


1 cup of almond meal/flour (ground almonds are fine! )
1 tsp of cinnamon
1/2 tsp of baking soda
1/2 tsp of salt
1 tbsp of vanilla extract

4 eggs separated (room temp for better result)
4 tbsp of peanut butter (sugar free kind, I used creamy)
4 tbsp of plain yogurt (can be replaced with melted butter)




Directions



1. Preheat oven to 175(170C) 350F
2. in a bowl mix cinnamon, baking soda, salt and vanilla extract with the egg yolks
3. to the mixture add peanut butter and yogurt
4. set the mixture aside
5. in an empty bowl whisk egg whites till it becomes foamy ( not stiff )
6. add egg whites to the other mixture and mix them with folding motion
 7. pour it in to a pan (parchment or buttered pan)
8. bake it for 27mins 
9. cool it for 10 mins before serving
